ธุรกิจยอดฮิตอันดับต้นๆ ที่ใครต่อใครก็อยากเข้ามาเป็นผู้ประกอบการกันมากที่สุดอีกธุรกิจหนึ่งก็คงจะหนีไม่พ้น “ธุรกิจร้านอาหาร” ที่เป็นธุรกิจในฝันของใครหลายๆ คน บางท่านอยากเปิดร้านอาหารเพราะใจรัก บางท่านมีฝีมือทำอาหารอร่อยก็อยากเปิดร้าน หรือมีเพื่อนฝูงมาชวนร่วมหุ้นเปิดร้าน แต่ธุรกิจร้านอาหารในเนื้อแท้แล้วถึงแม้จะได้กำไรดี แต่ก็มีรายละเอียดให้ต้องศึกษาและรู้จริงก่อนที่ก้าวเข้ามาเป็นเจ้าของร้านอาหารได้

ดังนั้น จำเป็นที่จะต้องพิจารณากลยุทธ์ทางการตลาดให้ครบทุกด้าน เรียกได้ว่าต้องมีส่วนประสมทางการตลาดสำหรับธุรกิจบริการ ดังนี้

1. ผลิตภัณฑ์ (Product) การเลือกประเภทอาหารจะต้องโดนใจกลุ่มเป้าหมายหรือตรงกับความต้องการ เช่น อาหารญี่ปุ่น เกาหลี ฝรั่ง สเต๊ก พิซซ่า หรือติ่มซำ เป็นต้น และควรพิจารณาคู่แข่งในบริเวณนั้นๆ ร่วมด้วยว่ามีคู่แข่งมากหรือน้อย

สิ่งที่สำคัญมากที่สุดก็คือ “ความอร่อยและสดใหม่” ของอาหาร ซึ่งจะเป็นสิ่งที่กุมหัวใจของลูกค้าให้กลับมารับประทานที่ร้านอีกในครั้งต่อๆ ไป สิ่งสำคัญในด้านผลิตภัณฑ์จะต้องเป็น “หนึ่งในใจของลูกค้า” หากลูกค้าอยากจะรับประทานอาหารแบบนี้จะต้องมารับประทานที่ร้านนี้เท่านั้น เช่น สุกี้ต้องรับประทานที่เอ็มเค ไอศกรีมต้องที่สเวนเซ่นส์ ข้าวผัดปูต้องร้านข้าวผัดปูเมืองทอง ปูผัดผงกะหรี่ต้องร้านสมบูรณ์โภชนา เป็นต้น

2. ราคา (Price) การตั้งราคาเป็นศาสตร์และศิลป์ที่จะต้องมองให้ออกว่าเงินในกระเป๋าลูกค้าที่ยินดีจ่ายให้นั้นมีเท่าไร หากตั้งราคาต่ำไปก็ได้กำไรน้อย แต่ถ้าราคาสูงเกินไปก็ขายได้น้อย

ฉะนั้น กำไรขั้นต้นของอาหารแต่ละจานควรอยู่ที่ 50-70 เปอร์เซ็นต์ หรืออาจมากกว่านั้นก็ได้ ขึ้นอยู่กับทำเลและบรรยากาศ การตกแต่งร้านที่สวยงาม ทั้งนี้ กลยุทธ์ราคาที่สามารถนำมาประยุกต์ใช้กับธุรกิจร้านอาหารมีอยู่หลากหลายมากเช่น การตั้งราคาแบบจิตวิทยา การตั้งราคาแบบเซต การตั้งราคาแบบมีของแถม การตั้งราคาขายแบบมีเงื่อนไข เป็นต้น

3. ทำเล (Place) สำหรับการทำธุรกิจค้าขายใดๆ ก็ตาม เรื่องการเลือกทำเลเป็นสิ่งที่สำคัญมาก ทำเลที่อยู่ติดถนน เดินทางได้สะดวก มีที่จอดรถ อยู่ใกล้กับแหล่งชุมชนมีคนสัญจรไปมามากมาย ย่อมมีโอกาสที่จะเรียกลูกค้าได้ง่ายกว่า ซึ่งมักจะเรียกว่า “ทำเลดีมีชัยไปกว่าครึ่ง”

สำหรับทำเลที่มักจะมีคนถามอยู่บ่อยครั้งอย่าง ทำเลบนห้างสรรพสินค้า ก็เป็นอีกทางเลือกหนึ่งที่ดี แต่ก็ควรที่จะต้องชั่งน้ำหนักด้วยว่าค่าเช่าและส่วนแบ่งการขายเป็นเปอร์เซ็นต์ที่จะต้องให้กับทางห้างสรรพสินค้านั้นคุ้มค่ากับรายได้ที่เข้ามาไหม หากสุดท้ายแล้วเหลือกำไรในระดับที่พอใจ ก็เรียกได้ว่าน่าสนใจเช่นกัน

4. โปรโมชั่น (Promotion) การทำการตลาดในยุคนี้มักจะผสมผสานการนำเอาเทคโนโลยีเข้ามาใช้ประโยชน์อย่างอินเทอร์เน็ตหรือโซเชียลมีเดียต่างๆ ก็เป็นเครื่องมือที่ประหยัดงบประมาณได้มากกว่าสื่อแบบดั้งเดิม (ป้าย หนังสือพิมพ์ นิตยสาร ทีวี วิทยุ เป็นต้น)

มีธุรกิจ SME หลายๆ ธุรกิจที่ประสบความสำเร็จในการนำโซเชียลมีเดียมาใช้ในการประชาสัมพันธ์ สามารถเพิ่มยอดขายได้แบบทวีคูณกันเลยทีเดียว การทำโปรโมชั่นก็ไม่จำเป็นที่จะต้องยึดติดกับรูปแบบเดิมๆ ร้านอาหารก็สามารถทำบัตรสมาชิก มีการสะสมแต้มแลกของรางวัล หรือแม้แต่การชิงโชคไอโฟน ไอแพด ก็ทำได้เพื่อให้ลูกค้ารู้สึกประทับใจและรับรู้ว่าทางร้านก็คืนกำไรให้กับลูกค้าที่มาอุดหนุนด้วย

5. บุคลากร (People) เป็นคีย์ที่สำคัญในธุรกิจร้านอาหาร ควรมีการอบรมและเทรนนิ่งพนักงานในด้านการบริการ การต้อนรับให้ดีเพื่อสร้างความแตกต่างและความประทับใจให้กับลูกค้า หลายๆ ร้านที่เห็นมักจะรับพนักงานพาร์ตไทม์หรือชาวต่างด้าวแล้วไม่ได้มีการฝึกอบรมพนักงานให้ดีเท่าที่ควร มักจะมีปัญหาในการสื่อสารกับลูกค้าหรือรับออร์เดอร์ผิดๆ ถูกๆ ส่งผิดโต๊ะบ้าง ถามลูกค้าซ้ำไปซ้ำมาบ้าง ซึ่งอาจจะทำให้ร้านของเราในสายตาของลูกค้าดูด้อยมาตรฐานได้

6. กระบวนการ (Process) ขั้นตอนในการบริการลูกค้า ตั้งแต่เดินเข้าร้านจนกระทั่งออกจากร้านจะต้องมีการกำหนดลงรายละเอียดทุกขั้นตอน แล้วให้พนักงานปฏิบัติตามอย่างมีแบบแผน มีการแบ่งหน้าที่ในการทำงาน เช่น ต้อนรับลูกค้า รับออร์เดอร์ การเช็กบิล ทอนเงิน ฯลฯ อย่างชัดเจนไม่สับสน

บางร้านมีการนำเอาเทคโนโลยีต่างๆ เข้ามาใช้ในการบริการก็เป็นสิ่งที่ดี ช่วยให้การบริการสะดวกและรวดเร็วขึ้น แต่ก็ขึ้นอยู่กับงบประมาณของร้านด้วย ทั้งนี้ สำหรับร้านเล็กๆ จะไม่ใช้ก็ไม่เป็นไร แต่ขอให้ทุกๆ การบริการเป็นที่ประทับใจของลูกค้าก็เพียงพอแล้ว

7. สถานที่ (Physical Evidence) การตกแต่งร้านที่สวยงาม ตั้งแต่ประตูทางเข้า บรรยากาศโดยรวมของร้าน ก็มีผลอย่างมากต่อการสร้างประสบการณ์ที่ดีแก่ลูกค้า ถึงแม้ว่าบางร้านเป็นร้านแบบธรรมดาๆ ก็ไม่เป็นไร ขอให้เน้นในเรื่อง “ความสะอาด มีสุขอนามัยที่ดี” ก็ถือว่าใช้ได้แล้ว

    นอกจากนี้เรื่องของห้องน้ำก็เป็นสิ่งสำคัญที่สะท้อนถึงความสะอาดของร้านที่มักจะถูกมองข้ามไป รวมถึงที่จอดรถก็เป็นอีกปัจจัยหนึ่งที่จะช่วยอำนวยความสะดวกให้กับลูกค้าของร้าน

   ในท้ายนี้ สิ่งที่อยากจะฝากไว้สำหรับการทำธุรกิจร้านอาหารให้ประสบความสำเร็จก็คือ “ความรักและการเอาใจใส่” ในแบบที่เรียกได้ว่า “ใส่หัวใจลงไปในอาหารทุกๆจาน” เพื่อส่งมอบอาหารที่ดีที่สุดให้แก่ลูกค้า เพราะเชื่อว่าความสุขของคนทำร้านอาหารก็คือ รอยยิ้มของลูกค้าขณะที่รับประทานอาหารของเรานั่นเอง
